'Sipro' Mexican Coffee

This natural process coffee delivers a full-bodied, richly layered flavour profile that stands out in the cup. There’s a subtle, almost boozy quality reminiscent of rum and raisin, bringing warmth and depth to each sip. Bright notes of orange zest add vibrancy, while pear drop sweetness and hints of rich dark chocolate create a smooth, well-balanced finish.

The natural processing method enhances the coffee’s character, allowing the fruit-forward qualities to shine. This results in a gentle, slightly fruity acidity that adds a refreshing lift without overpowering the deeper, sweeter notes.

Served frequently as our single origin espresso across all our locations, this coffee has become a firm all-round favourite — equally enjoyable on its own or paired with milk, where its sweetness and complexity continue to shine.

ORIGIN
SIPRO is short for Sierra Productora de Cafe, a recently formed association that was created through the collective efforts of eight mostly young coffee producers based in Amatenango de la Frontera. This region is located directly across the border from the world-renowned coffee-producing area of Huehuetenango in Guatemala, sharing similar terroir and coffee quality. By organising themselves into a cooperative, the group aims to strengthen their presence in the market and gain better access to speciality buyers.
