Sunshine Chocolate is a happy band of chocolatiers, confectioners and cocoa conservationists, showcasing Caribbean cocoa & traditional craftsmanship.
With experience in French pastry houses and chocolateries, at sugar boilers in the North of England in factories powered by Victorian steam engines & with conservation and restoration projects at cocoa plantations, we practise a living craft, produce in small batches and combine the best of British ingredients with carefully selected sun blushed cocoa.
Our story
Meet Sunshine
Sunshine is led by our maître chocolatier Joss who trained under a pupil of the revivalist British confectioners of the 1930's, starting his training at 16, taking a small detour to study Charles Ashbee and his Guild of Handicraft, training in France, Germany, with chocolate houses in Britain and one of the last remaining sugar boilers in the North of England. He leads our chocolatiers, confectioners and chocolate makers. Our cocoa sourcing is led by Bertrand, our cocoa expert, who has worked with projects in South America restoring 18th century cocoa plantations and collecting data for research projects combatting cocoa blight. Finally, Carol brings a background in design and has the patience to steer the office of the good ship Sunshine.
