The badass big sister of Troublemaker - same ingredients but twice the ratio of Scotch Bonnet chillies to Pineapple. Interestingly the pineapple seems to come through more in this sauce than it does in its milder sibling that contains more actual pineapple! No doubt a quirk of the fermentation process and it does lend more friendliness to what is otherwise quite fierce heat. Heat aside this sauce is full of flavour & has perfectly balanced complexity. I shouldn't really have a fave, but if I did, this would be it. Double Trouble is an everyday, all-use sauce that marries any flavour you can throw at it & is particularly great with tacos, wraps, pizza & burgers. A little goes a long way. Double Trouble is handmade in small batches & fermented for at least six weeks, developing complex flavours & acids otherwise unattainable through merely cooking & blending the ingredients. Like the other two sauces in this range, it is one of the only vinegar-free hot sauces available world-wide, with its sharper characteristics a result of the lactic acid produced during fermentation. Finally, hot sauce for grownups.
Ingredients: Pineapple (31%), red pepper, scotch bonnet (19%), onion, carrot, sea salt, garlic, rapadura sugar, ginger root, herbs & spices.
Refrigerate once opened & use within 6 weeks.
At Muti we do not use any of the 14 regulated allergens as ingredients in any of our products. That said, some of our suppliers do handle such ingredients & so we cannot guarantee that they are trace-free.
Muti hot sauces are delivered in glass bottles of 200ml volume with security-sealed aluminium lids. Once finished place the bottle with the lid screwed on into your regular home glass recycling box for council collection.
As Muti hot sauces are natural products certain characteristics may change from batch to batch and because they do not contain any thickeners or gums minimal separation may occur. This is completely natural & if it happens simply give the bottle a shake & you're good to go.
Muti hot sauces are fermented specifically to develop flavour & acidity, but an offshoot of this fermentation process is the establishment of dominant populations of beneficial gut friendly bacteria. However, Muti hot sauces are cooked once the flavour & acidity reach their peak development & this exposure to heat kills all the beneficial bacteria.
