Slow Sundae is a Brazilian specialty espresso coffee from the Cerrado Mineiro region of Minas Gerais. Grown at 1,050 masl on Fazenda Sucuri, this naturally processed Yellow Catuai lot delivers a smooth, creamy cup profile with notes of peach, milk chocolate, and macadamia.
Designed to shine as espresso, Slow Sundae balances sweetness and body, offering a rich texture and a long, comforting finish — a perfect showcase of Brazilian specialty coffee craftsmanship.
Farm / Producer Info
Danilo Barbosa and his sons, Marcelo and Sérgio, represent the fourth and fifth generations of a family deeply rooted in coffee farming since 1930. In its early years, coffee was grown solely for family consumption, but Danilo’s father, Jairo Barbosa, saw its greater potential and transformed it into the family’s passion and livelihood.
Today, Danilo and his family continue that legacy on Fazenda Sucuri, working alongside long-time collaborators, some of whom have been part of the farm for over two decades. Their focus on quality and sustainability has brought them international recognition, including a Cup of Excellence championship in 2021, solidifying their reputation among Brazil’s top specialty producers.
Process Info
This lot of Yellow Catuai is a natural process coffee, dried slowly on African-style raised beds to ensure even airflow and consistent moisture reduction. The controlled drying method enhances sweetness and body, creating a balanced espresso with creamy chocolate tones and subtle fruit complexity.
Brew Recipe
- Espresso: 1:2 coffee to water, water temperature 91°C, extracted in 28 – 32 seconds
- Pour over: 1:16 coffee to water, water temperature 89°C, pour in stages, brew time 2:30-3:00 mins
- French press: 60-65g coffee per litre of water, water temperature 91°C, brewed for 3-4 mins
- Aeropress: 16g coffee, water 250g, water temperature 91°C, brewed for 1:30-2 mins, press time around 45 sec
- Stove top: 18g Coffee - 200g water - 94 degrees - grind size extra fine - brew time 5.5 minutes
