A bold, grooved pasta perfect for chunky sauces and hearty dishes. Pronounced “tohr-tee-lyo-nee” in Italian or “toe-tig-lio-knee” rather slowly in Yorkshire, it is similar to Rigatoni but with more pronounced grooves that swirl their way around the pasta. Its name stems from the Latin ‘torquere’, meaning ‘to turn’. It is ideal for simple sauces, zesty salads, fish dishes, cheese boards and rustic Italian meals.
We dry it slowly overnight at gentle temperatures to allow the flavour to really develop.
